(3) Preparation: Add maltodextrin and sodium carboxymethyl cellulose to the slurry after the colloid mill, and the mass ratio of blueberry fruit: maltodextrin: sodium carboxymethyl cellulose is 10~40:1:1;
(4) High-pressure homogenization: The prepared slurry is passed through a high-pressure homogenizer 3 to 5 times, and the pressure of the high-pressure homogenizer is 20~60MPa;
(5) Spray drying: The prepared homogenized slurry is dried using a spray dryer, and the inlet temperature of the spray dryer is 170℃～190℃, outlet temperature is 70℃～75℃, feed pump speed is 45～50 rpm, and blueberry whole fruit powder is obtained.
