It is made from tapioca starch, which itself is derived from the crushed pulp of the cassava root (Manihot esculenta), a tuber native to South America.

Raw tapioca pearls are typically white, hard, and opaque.

They are processed by boiling and simmering, which causes them to become soft, chewy, and translucent with a distinctive dark brown or black hue—achieved by adding brown sugar or caramel coloring.

The signature tapioca pearl is prized for its unique, gelatinous, and pleasantly chewy texture, known as"Q"or"QQ"in Taiwanese.
